Cooking does not remove death cap poison
Amatoxins are heat-stable. Boiling, frying, drying and pickling do not make the death cap edible under any circumstances whatsoever.
The death cap Amanita phalloides contains amatoxins, above all alpha-amanitin. These compounds block RNA polymerase II, the enzyme cells need to transcribe genetic information into RNA. The liver is particularly exposed, taking up a large part of the toxin from the digestive tract. A dose dangerous to life may be present in a single fruiting body, so no home test and no method of preparation provides safety.
Amatoxins withstand the temperatures reached in boiling, frying and baking. They are not removed by drying, freezing, pickling or repeatedly pouring off the water. Preparation may change the taste or texture of a mushroom, but it does not turn it into an edible product. Claims about "boiling out the poison" are sometimes carried over from species containing other, soluble compounds; applied to the death cap they are lethally dangerous.
The course of the poisoning makes the situation harder to judge. The first violent gastrointestinal symptoms usually appear only after some hours. They may be followed by an apparent improvement while damage to the liver continues to progress. Waiting for the next phase takes away the time needed for treatment. If there is any suspicion that a death cap has been eaten, call 112 immediately or contact a poison centre, do not induce vomiting yourself, and keep the remains of the meal and of the raw mushrooms for identification.
The best prevention does not consist of memorising one cap colour. The species may be olive, yellowish, brownish or almost white. What matters is the whole set of characters, including free white gills, a ring and a volva at the base of the stipe, which is easily left in the ground when a mushroom is cut. Only species identified beyond doubt are collected for eating; an app and a photograph do not replace assessment of the whole specimen. Collecting very young fruiting bodies whose characters have not yet developed, and mixing all specimens in one basket before checking them, are particularly risky.
What the evidence actually shows
Amatoxins withstand ordinary food preparation, although saying that heat never changes them at all would be too strong. Sharma and colleagues measured α- and β-amanitin after boiling, baking, frying, and grilling. Some treatments reduced measured concentrations, and boiling transferred part of the water-soluble toxin into the cooking liquid. None of those results establishes a safe recipe: the remaining dose may still be lethal, starting concentrations and portions vary, and the broth remains hazardous. Amatoxins inhibit RNA polymerase II, and initial gastrointestinal symptoms often begin only after a long delay, while liver injury is already developing. Drying, freezing, or repeated parboiling should not be presented as detoxification methods. Suspected ingestion requires immediate contact with emergency or poison-control services, rather than a home test or waiting to see whether symptoms appear.
