Does chitin really make mushrooms hard to digest?
Fungal cell walls are made of chitin — the same material as insect shells. The often-repeated claim that humans cannot digest it at all is imprecise.
Chitin is a tough polysaccharide building the cell walls of fungi, and also the shells of arthropods. It is often repeated that humans cannot digest it at all. Studies of human gastric juice have, however, shown activity of an acidic mammalian chitinase, an enzyme able to cut the bonds in chitin and to work in the acidic environment of the stomach. The true picture is therefore more subtle than a simple "we digest it" or "we don't".
Enzyme activity differs between individuals, and chitin in a fruiting body is not present as a pure, readily accessible powder. It is part of a compact wall joined to other polysaccharides and proteins. The degree to which the material is broken up, the species, the maturity of the fruiting body and the method of preparation all affect how quickly the digestive tract deals with a meal. That is one reason why a large portion of mushrooms can feel heavy even when the species is edible.
Heat treatment has several purposes, but it does not "dissolve all the chitin". It softens the tissue, makes its interior more accessible, reduces the microbial load and, in some species, lowers the amount of irritant compounds. The time needed for safe preparation depends on the species; there is no single rule that all mushrooms must be boiled for a very long time. Some species must not be eaten regardless of preparation.
The practical conclusion is this: eat correctly identified mushrooms, clean them thoroughly, cut them up, cook or fry them according to the guidance for the species, and start with a moderate portion. Children, older people and those with digestive illnesses may tolerate them less well. Chitin is part of the explanation for how heavy mushrooms can be, but it justifies neither the myth of complete indigestibility nor treating cooking as a way of neutralising poisonous species. That distinction matters for chitin or chitosan supplements too: their presence does not automatically prove the health effect claimed for them, which requires separate clinical study.
What the evidence actually shows
Chitin strengthens fungal cell walls, but it is not a complete explanation for a rule that mushrooms must always be cooked for a long time. In a pilot study of 25 human gastric-juice samples, acidic mammalian chitinase activity was detected in 20 and was nearly absent in five. The assay used prepared substrates rather than whole mushrooms, so it did not measure how much nutrition people obtain from any particular species. Chopping and heating can soften tissue and improve enzyme access, but appropriate cooking depends mainly on species and chemistry. Some edible mushrooms require thorough heating because they contain irritants or heat-labile compounds; other fungal toxins are not made safe by cooking. Chitin can also behave as dietary fibre. Its presence neither proves poor digestibility in every person nor distinguishes an edible mushroom from a poisonous one.
