Roquefort: a mould with an address written into law

The appellation specification does not simply say "Penicillium roqueforti". It says the strains must come from the microclimate of the caves beneath one French village.

Few fungi have their address written into a legal instrument. Penicillium roqueforti does, and not as a curiosity but as a condition without which the cheese may not be called Roquefort.

The current PDO specification was approved by an order dated 6 February 2026. Seeding uses powders or cultures prepared from traditional strains isolated in the microclimate of the delimited caves of Roquefort-sur-Soulzon. The document also governs milk, production area, maturation and time—not only the origin of a culture.

The second condition concerns the place of ripening and is more specific still. Ripening takes place in the caves situated in the scree zone of the Combalou mountain, in the commune of Roquefort-sur-Soulzon, delimited by the judgment of the court at Millau of 12 July 1961. That detail deserves a moment: the boundary of the area within which the cheese may ripen was drawn by a court, not by a minister and not by a geographer.

The natural part explains why there. Through the fissures of the scree, true chimneys known as fleurines, comes a current of cool, humid air. The specification describes the mechanism: air entering the ground is cooled by the walls of the cliffs facing north-east, descends towards the base of the scree and takes up moisture in contact with the underground aquifer. The fleurines work as an immense generator of cold humid air whose output varies with outside temperature and atmospheric pressure. It was in this microclimate that Penicillium roqueforti developed.

The timing regime is equally precise. The cheese is ripened and matured for a period of not less than ninety days from the day of manufacture. Within that period it is first exposed naked in the cave — unwrapped — for as long as the proper development of the mould requires, and that stage may in no case be shorter than two weeks. Only then does slow maturation follow under a protective wrapping, which slows further growth of the fungus. The temperature of the maturation phase may not fall below minus five degrees.

Notice what this arrangement actually does. The producer does not steer the mould with additives or with sterilisation. It is steered by exposure and by enclosure: first the fungus is given the air of the cave, then it is taken away. The whole craft lies in judging the moment.

The raw material closes the system. Roquefort is made exclusively from the raw, whole milk of Lacaune sheep, described in the specification as perfectly adapted to the conditions of the area. The farming system excludes transhumance and rests on fodder from near the holding.

The history of all this is older than the microbiology that explains it. The cheese is mentioned in 1070 in the cartulary of the abbey of Conques, in the Aveyron. In 1666 a judgment of the parliament of Toulouse confirms royal privileges granted since Charles VI and grants the inhabitants of Roquefort-sur-Soulzon the exclusive right to ripen the cheese. In the eighteenth century Diderot and d'Alembert call it in the Encyclopédie the king of cheeses. And on 26 July 1925 parliament passes a law making Roquefort the first cheese recognised as an appellation of origin.

That date matters more than it looks. The entire European system of protected designations of origin — the same one that now covers hundreds of products — begins with an argument about who may ripen cheese in particular caves. At the root of the idea of terroir stands not a vine but a fungus.

The rest of the specification exists to give the fungus exactly the conditions it needs and nothing beyond them. Apart from the dairy raw material, the only permitted ingredients and processing aids are rennet, salt, and cultures of bacteria, yeasts and moulds whose safety has been demonstrated. Renneting takes place no later than forty-eight hours after the oldest milking, at a temperature between twenty-eight and thirty-four degrees. Holding the raw material, the work in progress, the curd or the fresh cheese at a negative temperature is forbidden.

A separate provision covers piercing. The cheese is pierced with needles so that air reaches the inside of the loaf — without it the mould, which needs oxygen, would stay near the surface and the characteristic blue veining would never form. The specification allows at most two days between piercing and reception into the ripening cave, extendable by two more if public holidays interrupted deliveries. That deadline measures how narrow the window is: once pierced, the cheese is already open to whatever the air brings, and it has to reach the place where the air is right.

And finally, a thing easily missed. The specification does not say that Penicillium roqueforti must come from there because the local one is better. It says it must come from there because that is part of the definition of the product. The law is not settling a question of taste here but a question of identity — which means that one species of fungus has been recognised as part of the heritage of a particular place in the same sense in which a building or a landscape is.

The protected name governs an entire chain

INAO’s current product record defines Roquefort as cheese made from raw, whole milk of Lacaune ewes. Penicillium roqueforti spores are added during manufacture, but the geography extends beyond the microorganism: milk production and cheesemaking occur within a delimited southern Massif Central area, while ripening and maturation take place in Roquefort-sur-Soulzon. The specification requires at least two weeks of uncovered ripening in caves in the Combalou rockfall, ventilated by natural fissures called fleurines, and at least 90 days total ripening and maturation from manufacture. Inoculation powders or cultures are prepared from traditional strains isolated in the microclimate of the delimited caves. “A mould with an address” is therefore shorthand. Protection covers a controlled relationship among raw material, strains, practices, duration and place—not every blue cheese inoculated with P. roqueforti.
